A couple of summers ago, while preparing my in-laws home for an Estate Sale, I came across a little cookbook from 1952 that a shortening company “Spry” put out called “10 Desserts that Husbands like best”. I am very nostalgic and this made me smile. I tucked that little cookbook away and was determined to explore the recipes at a later date (when I had time). Well, the last month and the arrival of the COVID 19 epidemic has provided that time. Baking has always provided me a way to release stress and to relax. It seems as if I am not alone, as I have found our local grocery stores completely out of flour (and toilet paper!). I took a poll from my friends to see what recipe out of this book they would like to see me make. The Coconut Cake won the popular vote, so that is the one I decided to make first. The recipe is a good one and will be around for many years to come. The frosting is a 7-minute frosting that has always been one of my favorites.
