Perfect Chocolate Pavlova

January starts a whole new year of exploring new recipes, experimenting with new flavors and revisiting some favorites from the past. While many people start off the new year with resolutions of cutting desserts and sweets out of their lives forever, I hold fast to my mantra- everything in moderation. I keep a pretty balanced routine all year round of exercise and good nutrition, and I have never limited my intake of desserts. I don’t eat an entire cake, or an entire pie and usually save my indulgences for the weekend. I love pretty food and I love desserts, especially PIE. This week’s recipe is for a chocolate pavlova. I love this because it is really chocolatey, and yet it feels really light with the crisp on the edge and soft center of the meringue. It reminds me of an upside down chocolate meringue pie without a crust. hmmmmm. I might have to try that out next week!
