I don’t think I have ever met anyone who doesn’t like a good slice of lemon meringue pie! It is a classic. It is a perfect dessert. It can be dressed up, dressed down. It is the perfect accompaniment for the most elegant dinner and celebration, or a summer picnic.
Meringue is sometimes tricky- I’ve had meringue that shrinks, I’ve had meringue that sweats, I’ve had meringue that kind of “floats” like an island on top of my pie. That was then- and this is now. When the weather is too humid, or too dry, I try this little meringue “trick”. I add some thickened cornstarch to my beaten egg whites and it makes the meringue hold its shape for several days.
