Now that it is September, it is time to start transitioning into Fall baking. This time of year I become obsessed with apple pies. As I have mentioned previously (to anyone who will listen), I have a ten year goal of winning a blue ribbon for one of my apple pies. This obsession has really perfected my pie making skills and I don’t think there is a variation on an apple pie that I haven’t tried. Until today. I have dumped out my recipe boxes (yes children, we used to write down recipes, exchange favorites with friends and keep these precious items in a recipe box) and gone through my 40 year collection of cookbooks looking for old favorites. This led me to an Apple Crisp Pizza Pie. I really don’t remember making this before, because if I did I am quite sure it would have become a family favorite. This is so worth baking, if for no other reason, to make your home smell like fall. The aroma swirling through the house this afternoon was delicious! I just closed my eyes and took some deep inhalations letting that apple cinnamon yumminess envelope me.
This variation of an apple crisp/apple pie is so perfect! It is the perfect balance between crust, filling and crumb topping. (And with the vanilla ice cream on top, it is pure heaven).
I had enough apple mixture left over to make a second pizza (about 8 inches in diameter), using the remainder of the double crust pie pastry.
