I found myself with an abundance of zucchini this past weekend and so I went zucchini crazy! I made a noodle-less zucchini lasagna (which was wonderful by the way), an Italian ricotta cheese zucchini bundt cake (recipe to come) and this super moist, super tasty zucchini cake. I am a chocolate lover through and through and this cake satisfied by biggest chocolate cravings. It also makes me happy that I am getting a nice serving of veggies at the same time! There are 3 cups of zucchini in this fabulous cake. I topped the zucchini cake with a creamy cream cheese frosting and oh my!!!
