Italian Ciambella, Ricotta Zucchini Breakfast Cake

Another GRATE zucchini recipe! (ha ha!). I grated so much zucchini that I looked through all my files to find my favorite all time zucchini recipes and found many variations of this cake. What I like about this version is that it is simple and can be made quickly. I also found a beautiful cake pan that I was excited to use and this recipe was perfect for a circular baking pan. This is so good on its own that I do not sprinkle powdered sugar on it or glaze it. Depending on your taste or when you plan on serving it, you may choose to sweeten it up a bit by giving it a dusting of powdered sugar. We eat this for breakfast, so prefer to keep it simple. It is a perfect accompaniment with your morning coffee or breakfast tea.
