People either love fruitcake or hate it. Which camp are you in? Personally, I never was a big fruitcake fan- the candied fruit was just weird, the boozy flavors were too strong. I guess there were just so many other Christmas goodies that I preferred that the Fruitcake was always overlooked. Flash forward to when my Mom came to visit us over the Holidays in 2000. (Can you believe that was 20 years ago?). We had a big Christmas party with lots of finger foods, appetizers and loads of my favorite Christmas cookies. My Mom wanted to contribute and she said “I’ll make my Coconut Fruitcake!” and I’m thinking- “ohh-kaayy…..”. Maybe it is one of those things that grows on you, or that you appreciate when you get older. Maybe it is because it is made from love and is full of memories of Christmases past.
