This Holiday season, I devoted my baking to researching and experimenting how to bake some of my all time favorite recipes without using eggs or nuts. My grandchildren have some allergies and I wanted to make sure that I baked a little something for everyone! I ended up going on an all out mission to create everything without eggs..
Let’s start with quick breads. I love, love, love having breads made ahead in the freezer to pull out for a quick breakfast or just a nice treat with a cup of tea or coffee. One of my favorites is an Orange Cranberry Bread. The recipe that I usually use has 2 eggs in the batter- so I started going through the list of all kinds of egg substitutes that I could try. From bananas to applesauce to chick pea water, etc. etc.- I decided to use 1/4 cup of carbonated water for each egg. This egg substitute fascinated me, so I tried it in everything I baked for Christmas (mainly because I just couldn’t understand how this could possibly work!). After testing this for 4 loaves of Cranberry Orange Bread I am totally convinced that this is a fantastic alternative to eggs. I still don’t have any idea of how this works, but it does! The bread had great texture and the same great taste as always. So, whether you have egg allergies, or just choose not to eat eggs- this recipe is for you! You will love it!!!!
