Certain desserts always remind me of spring and summer and this is one of them. I wanted to make 2 different recipes of a Pineapple Upside Down cake theme, so I made cupcakes using a shortcut of a prepared yellow cake mix, and then a Pineapple cake from scratch. I wanted to compare texture, taste and see what I preferred. (The jury is still out!)
The cupcakes here are really beautiful. They are moist and so flavorful. If you are having a summer gathering, these would be a perfect dessert. Everyone can have their own beautiful pineapple ring with cherry on top, right in front of them. Using the jumbo cupcake pan is the perfect size for the pineapple ring to fit in. The addition of the rum (or rum flavoring) makes the cupcakes a little more special.
Using a jumbo cupcake pan, this recipe made 9 large cupcakes. You could make these in regular cupcake pans and for sure you would get at least 12 cupcakes out of the recipe, The pineapple would need to be chopped to place in the bottom of the cupcake pan.
