adminI love making special desserts for the holidays- all holidays… Not only is this jack-o-lantern cake so adorable, it is a delicious pumpkin cake. It has great texture and is so moist! Of course putting cream cheese frosting on anything is a bonus! I love pumpkin bread and cream cheese spread on top, and this tastes just like that! This would be perfect for a Halloween party, or any time you want to have a show stopping dessert or centerpiece.
You could make this in a really big bowl and divide the batter, but I always like making 2 separate cakes. I put 4 bowls out on the counter and mix with a wooden spoon. No need for a mixer on this cake!
