Oh boy! It’s red, white and blue time! Summer is here, let’s celebrate with these super spectacular classic cupcakes.
Always a favorite- the red velvet cupcake! I’m still thinking about the red velvet cheesecake that I made for Christmas and wondering how we can have Christmas in July. All this contemplation led me to create these cupcakes. A red velvet cupcake with a center or topping of cheesecake and then frosted with a cream cheese frosting. I added some red cherry chips into the cheesecake, thinking it would be nice to have a little “pop” of color in the cheesecake portion. (Then, I departed from my recipe and swirled a bit of blue food coloring into the cheesecake batter while it was on the cupcake–you don’t need to do this…just a little extra extra for the fourth of July).


Making red velvet cupcakes from scratch isn’t hard and it is totally worth the effort. Of course if you are short on time, you can always use a cake mix– but, once you make these from scratch you will never make another box red velvet again!!! They are THAT good!!!
