RHUBARB! RHUBARB! RHUBARB!

Many people do not know what Rhubarb is. I think I was 40 years old before I ever even tasted a Rhubarb Pie! It kind of looks like red celery, and it seems like a really strange ingredient for a pie, but it makes a delicious flavorful pie that is beautiful in color and tastes like summer! My mother-in-law first introduced the rhubarb pie to me and I was an immediate fan! I saw a bunch of pretty red rhubarb in the grocery store the other day and suddenly had a craving for some of my favorite rhubarb desserts!

Today I made a Classic Rhubarb Pie with a lattice crust to top it off. I had so much rhubarb left over, that I also made a Rhubarb/Blueberry Cobbler. This is the first time that I have put a cobbler on here, but not to diminish the importance of a cobbler. If you love pie, a cobbler is the next best thing! When you find yourself wanting the fruity deliciousness of a pie, but just not in the mood to whip up a crust- cobbler is the way to go. Enjoy both of these desserts warm with a little vanilla ice cream. Sooooooo Good!!!
