Tarta de Santiago!

July always brings back a flood of memories from our trip to Spain a few years ago. Our son gave my husband his guidebook from his 500 mile journey across Spain for Christmas. About two months later, we said “We should do this!” and with relatively little preparation, we flew to Spain with backpacks and very few possessions. We began in St. Jean Pied de Port, France and 33 days later arrived in Santiago, Spain.

I can’t believe that it has taken me this long to make this special cake. To me this cake symbolizes the journey. The pilgrimage taught me many lessons, one being to appreciate the simple things in life. Wearing the same clothes every day, the same shoes, no make up, no fancy skin or hair products. We walked. We talked. We listened. We prayed. And the next day, we did it all again. It was one of the best times of our life together.

The cake is simple. It is unpretentious and delicious. It was our special treat that awaited us at the end of our 500 mile journey on foot. When I eat this, it is like a “Atta girl! You’ve got this!”
